Breakfast
Banana Nut Berry Salad: Doesn’t this look delicious? So, I started out with a banana sliced into circles. Then set some fresh organic strawberries next to it. Then I defrosted some organic raspberries and actually warmed them a little. I poured that along the side and then I topped it off with Willamette Valley Granola in Honey Nut. I can not rave enough about these Willamette Valley granolas. I hate when it’s crazy crunchy and this stuff is perfect. I always love having some puree or something moist (ie the raspberries here) to soak into it to for a more moist out by the end. And it’s organic + GMO free too.
Rating: 9/10 stars. Maybe the only reason it didn’t get that last star was because it was pretty soggy by the end. But I think a little less raspberries would do the trick. The flavors balanced great. Lots of great fruit and hearty granola kept me feeling full. It actually felt more like a dessert too! Yum!
Lunch
Sweet and Salty Summer Salad: Ok, I cheated. No lean protein in this lunch. But I did add some great heart healthy nuts! This was shockingly amazing. I just put some Spring mix in the bowl and topped it with some roasted, salted sunflower seeds. Then sliced up watermelon and arranged it on both sides. Then I sprinkled a little sugar on the watermelon. The sweetness of the fruit/sugar and the saltiness of the seeds was fabulous together!
Rating: 9/10 stars. When I was making this I was wondering what I was really doing. It’s a little random. But this was delicious. I would even recommend this for a snack or a summer party salad. The salt and sugar just brought it to a whole new level. The only thing I would leave out would be the lettuce. But it’s salad so lets just pretend it’s the garnish. I forced down the lettuce at the very end all sad that the party in my mouth was over.
Dinner
Fast Food Salad. Yep, I am going there. Listen. We don’t do fast food very often but tonight we were running home well past dinner time with starving kids and somewhere to be in 30 minutes. So, we ran through a drive through. I didn’t want a restaurant salad because I had fresh organic spinach at home calling my name. So, I bought a cheapo chicken buffalo sandwich. We got it home and I threw out the bun diced it up. I thew it over my spinach and sprinkled it with cheese. No dressing necessary. The buffalo sauce was enough. This is easy peasy for you to do with any sandwich or wrap or whatever tickles your fancy.
Rating: 9/10 stars. I loved this! I am only withholding a start because I took the easy way out. But, we were super busy and I worked in my salad for dinner! So, I win!
