7 Days of Salad {day 4}

Just catching wind of this? ย Well, I am enjoying and sharing three salads a day this week as I attempt to detox a little before our big vacation. ย Read more about itย here.

Breakfast

Banana Nut Berry Salad: ย Doesn’t this look delicious? ย So, I started out with a banana sliced into circles. ย Then set some fresh organic strawberries next to it. ย Then I defrosted some organic raspberries and actually warmed them a little. ย I poured that along the side and then I topped it off withย Willamette Valley Granola in Honey Nut. ย I can not rave enough about these Willamette Valley granolas. ย I hate when it’s crazy crunchy and this stuff is perfect. ย I always love having some puree or something moist (ie the raspberries here) to soak into it to for a more moist out by the end. ย And it’sย organic + GMO free too.

Rating: 9/10 stars. ย Maybe the only reason it didn’t get that last star was because it was pretty soggy by the end. ย But I think a little less raspberries would do the trick. ย The flavors balanced great. ย Lots of great fruit and hearty granola kept me feeling full. ย It actually felt more like a dessert too! Yum!

Lunch

Sweet and Salty Summer Salad:ย  Ok, I cheated. ย No lean protein in this lunch. ย But I did add some great heart healthy nuts! ย This was shockingly amazing. ย I just put some Spring mix in the bowl and topped it with some roasted, salted sunflower seeds. ย Then sliced up watermelon and arranged it on both sides. ย Then I sprinkled a little sugar on the watermelon. ย The sweetness of the fruit/sugar and the saltiness of the seeds was fabulous together!

Rating: 9/10 stars. ย When I was making this I was wondering what I was really doing. ย It’s a little random. ย But this was delicious. ย I would even recommend this for a snack or a summer party salad. ย The salt and sugar just brought it to a whole new level. ย The only thing I would leave out would be the lettuce. ย But it’s salad so lets just pretend it’s the garnish. ย I forced down the lettuce at the very end all sad that the party in my mouth was over.

Dinner

Fast Food Salad. ย Yep, I am going there. ย Listen. ย We don’t do fast food very often but tonight we were running home well past dinner time with starving kids and somewhere to be in 30 minutes. ย So, we ran through a drive through. ย I didn’t want a restaurant salad because I had fresh organic spinach at home calling my name. ย So, I bought a cheapo chicken buffalo sandwich. ย We got it home and I threw out the bun diced it up. ย I thew it over my spinach and sprinkled it with cheese. ย No dressing necessary. The buffalo sauce was enough. ย This is easy peasy for you to do with any sandwich or wrap or whatever tickles your fancy.

Rating: 9/10 stars. ย I loved this! ย I am only withholding a start because I took the easy way out. ย But, we were super busy and I worked in my salad for dinner! So, I win!
