Breakfast
Chocolate Strawberry Salad: Who says that you can’t have chocolate for breakfast? Just a little was enough to make this feel like a treat and quench some cravings for sweets! I started out with fresh halved organic strawberries. Then I defrosted some frozen strawberries and mixed them in for a little ‘sauce’ type feel. I then sprinkled some chocolate chips on top and also some walnuts. I sliced up half a pear to eat with it too.
Rating: 8/10 stars. It was really good. Maybe dark choclate chips would have been a healthier option. Tip. Make sure that the fresh and frozen strawberries some to the same temperature before eating otherwise it’s kind of a wierd taste. The first two bites were tart but then after leaving it and cleaning up kids messes and then remembering it an hour later it was delicious!
Lunch
Fresh Farmer’s Salad: Yum yum yum yum yum. This was delicous. It’s just a bed of fresh Spinach and Spring Mix. Then a little bit of olive oil and salt and pepper. I topped it with whatever was handy. The fresh green onions, cherry tomatoes, avocado and orange bell peppers. The cheese is Boar’s Head Jalapeno Cheddar and was perfect on this.
Rating: 10/10 stars. When I was making this I was all sad that I didn’t have Ranch because I thought it would need that but oh my goodness it was delicious just like this. These veggies just went together great and the fun cheese completed the lovefest on my palate. And… it doesn’t get any easier than this!
Dinner
Spaghetti Salad. Yep, I went there. I was serving the family Spaghetti and Meatballs and how could I miss out on that one! So, I started with a Spring Mix. Then just did a tiny amount of noodles (in sauce) and then topped it with the meatballs and then some mozzarella cheese. I drizzled very light olive oil on top and then used my garlic salt grinder and peppermill on it. It all came together great and I didn’t miss that huge plate of carbs! And I don’t know if I’m a wierdo or what but you have probably noticed that I love noodles in my salad. I don’t know why but I can’t get enough of it!
Rating: 9/10 stars. This was good. I mean it’s Spagetti and Meatballs on a salad so how can it not be. The freshly ground sea salt / garlic blend was what really pulled it together. I felt like I was having Garlic Bread too. Yum. I kind of want some more of this.
