Breakfast
Granolaย Mashup: ย I loved this one. ย First, I diced some organic red delicous apples. ย Then I put a banana into a ziploc bag and mashed it up. ย I then mixed in with the apples to make it a little heartier and stick together. ย Then I topped it off with Willamette Valley Granola in Blueberry Flax. ย This stuff is so good and I would recommend it to anyone. ย It’s crunchy without being too hard to chew and organic + GMO free too. ย It pulled it all together and this was a great hearty breakfast before hitting the gym.
Rating: 9/10 stars. ย Maybe a tablespoon of blueberry yogurt mix in as well would have been fab.
Lunch
Mahi Mahi Goodness: Ahh, I can’t think of a better name. ย This one was inspired by a Fish Taco. ย Yum! Fish Tacos! ย It was easy peasy. ย Start with a bed of 50/50 lettuce blend. ย Then I diced up some fresh cherry tomatoes and white onion. ย Then in a small pan I sauteed my Mahi Mahi fillet in light olive oil, fresh lemon juice, a little bit of black pepper and sprinked it with a whole lot of dill. (Dill makes everything better). ย Then I sliced it and placed it on my salad using the liquid from the pan as a light sauce. ย There is no other dressing on the salad other than more lemon juice that I squeezed on it. ย I wanted it fresh and crisp!
Rating: 9/10 stars. ย Maybe a light chipoltle based dressing would have been good as the lemon was a hair bitter. ย But I still ate it all and would make it again!
Dinner
Red Pepper Beef Salad. ย Another dinner hit that left Matt asking for seconds! ย This was again easy ย to throw together. ย The base is fresh spinach. ย It is drizzled very lightly with ย a tablespoon ofย Annieโs Organic Chile Lime dressing. ย I had bought some extra lean stir fry beef at Sprouts. ย I sauteed the beef with crushed red pepper and a dash of olive oil. ย Then I threw in whole cherry tomatoes and sliced red peppers. ย Not to fully cook but just to soften and warm. I thew it all over the spinach and served it warm. ย It was so so so good! ย Just the perfect level of spicy and the warm tomatoes were incredible on it.
Rating: 10/10 stars. ย This was perfect. ย Not greasy but a great source of protein and very filling. ย Make this one! You will love it.
