7 Days of Salad. {day 2 }

Just catching wind of this?  Well, I am enjoying and sharing three salads a day this week as I attempt to detox a little before our big vacation.  Read more about it here.

Breakfast

Granola Mashup:  I loved this one.  First, I diced some organic red delicous apples.  Then I put a banana into a ziploc bag and mashed it up.  I then mixed in with the apples to make it a little heartier and stick together.  Then I topped it off with Willamette Valley Granola in Blueberry Flax.  This stuff is so good and I would recommend it to anyone.  It’s crunchy without being too hard to chew and organic + GMO free too.  It pulled it all together and this was a great hearty breakfast before hitting the gym.

Rating: 9/10 stars.  Maybe a tablespoon of blueberry yogurt mix in as well would have been fab.

Lunch

Mahi Mahi Goodness: Ahh, I can’t think of a better name.  This one was inspired by a Fish Taco.  Yum! Fish Tacos!  It was easy peasy.  Start with a bed of 50/50 lettuce blend.  Then I diced up some fresh cherry tomatoes and white onion.  Then in a small pan I sauteed my Mahi Mahi fillet in light olive oil, fresh lemon juice, a little bit of black pepper and sprinked it with a whole lot of dill. (Dill makes everything better).  Then I sliced it and placed it on my salad using the liquid from the pan as a light sauce.  There is no other dressing on the salad other than more lemon juice that I squeezed on it.  I wanted it fresh and crisp!

Rating: 9/10 stars.  Maybe a light chipoltle based dressing would have been good as the lemon was a hair bitter.  But I still ate it all and would make it again!

Dinner

Red Pepper Beef Salad.  Another dinner hit that left Matt asking for seconds!   This was again easy  to throw together.  The base is fresh spinach.  It is drizzled very lightly with  a tablespoon of Annie’s Organic Chile Lime dressing.  I had bought some extra lean stir fry beef at Sprouts.  I sauteed the beef with crushed red pepper and a dash of olive oil.  Then I threw in whole cherry tomatoes and sliced red peppers.  Not to fully cook but just to soften and warm. I thew it all over the spinach and served it warm.  It was so so so good!  Just the perfect level of spicy and the warm tomatoes were incredible on it.

Rating: 10/10 stars.  This was perfect.  Not greasy but a great source of protein and very filling.  Make this one! You will love it.
